Can't remove time machine drive

Hey gang.

I am trying to do two things with Time Machine on Catalina and can't do either:

1) I can't "turn off" Time Machine. There used to be a button but I don't know where it went.

2) I can't remove one of the drives currently assigned as a backup. In this case "Old Backup". In the main pane, it still shows up, yet oddly enough, when I click "options" it's not in the list.

Thoughts?

That's not where it is. To add or remove backup disks scroll through the list of backup disks. "Add or Remove Backup Disk..." appears at the bottom.
