Downgrade from Catalina to my old software

I installed Catalina but some programs have complications now, and some are not opening. I do not want Catalina any more.

How do I go back to my Sierra software if I have a backup hard disk with all my files on it?

Downgrading macOS I currently want to downgrade from macOS Monterey to Catalina 10.15.7. I have the "Install macOS Catalina" ready, I also have a 8 gb USB. So if I boot up the USB and press install macOS Catalina will it erase everything on my disk? btw I have time machine.
