Hi Frankgold,
Thank you for posting in the Apple Support Communities. I understand your Series 5 Apple Watch does not seem to be properly tracking elevation.
It sounds like you may need calibrate your Apple Watch.

I tried those suggestions and calibrated the watch, but so far my watch is still not showing elevation. Could it be my watch? Should I seek a replacement?
Thanks, fieryjack, but my compass was already set to "while using," so I don't think that's the problem.
No, I have not tried that. I can give it a shot and see if it helps. Thanks.
OK. If I do that, though, won't I lose all of the faces I have organized with their complications, etc.?
Try this;
On your iPhone --> Settings --> Privacy --> Location Settings --> Compass. There you can change the setting to While Using the App. This will change your setting on your watch and the altitude and other coordinates should appear.
Have you tried unpairing and re-pairing and setting up as new?.
Don't restore from backup though because if there is a software fault it will just get restored again from the backup.Set it up as new.
Yes you will but if it fixes the problem wasn't it worth it?.
