Showing elevation and elevation gain

My Apple Watch 5 will not show elevation or elevation gain while using the hiking activity (or any activity). How can I fix this?

It sounds like you may need calibrate your Apple Watch.

Try this;

On your iPhone --> Settings --> Privacy --> Location Settings --> Compass. There you can change the setting to While Using the App. This will change your setting on your watch and the altitude and other coordinates should appear.
