Facetime

Is there any way you can restore a facetime call and actually listen to the conversation, or can you only restore the history of the call?

FaceTime calls are not saved anywhere so they cannot be backed up and therefore cannot be restored. The call history will be backed up when a backup is created and therefore if you restore your iPhone from a backup then the call history will be restored but it will be only as current as the date and time the backup was created.
