When I buy a new 21,5 inch iMac. What is the IOS installed?

Prior to the next release of macOS in the Fall timeframe, it will be macOS Catalina, as iOS is reserved for iPhones and iPads.
If you buy a new 21.5" only purchase one with a minimum of 16GB of RAM and the largest SSD you can afford. DO NOT purchase one with a 5400 RPM HD, you will regret the decision.
