I followed all instructions in this article. When the original OS (Mountain Lion, in my case) was ready to install through Recovery, I was asked to choose which disk to install to, but there was nothing clickable on the screen, and no way to select the disk.
Any ideas?

Click here, download the installer, and if needed, use a tool such as DiskMaker X to create an installation thumbdrive. You can use this to install High Sierra without reformatting the volume.

The only reasons to reformat HFS+ Journaled:
Note: APFS is automatic on Solid State drives with High Sierra and later. Meaning you will need to use the Option key Startup Manager if you plan to use an older operating system to dual boot from on SSDs.
I am running Catalina now. I created a new APFS volume (as instructed in the article), with plans to use it for High Sierra, to enable me to run an older app that does not support Catalina.
Recovery only provides options for installation of a beta, or of the existing OS (Catalina, in my case), or the original OS (Mountain Lion for me). I chose the original OS.
After I accept the license agreement for Mountain Lion, is asks me to select a disk, but no options are provided. The only thing I can click on is the "back" button.
Do I still need to reformat the disk that I created to Mac OS Extended (Journaled)?

Mountain Lion can't see local APFS volumes. Reformat it as Mac OS Extended (Journaled).
