Hi, i bought my phone in February 2020 and I noticed that every time I use Instagram the phone always freeze and power itself off and on.
Can someone say the reason for that ?

If it happens using that app only, you can try to delete Instagram app, restart your iPhone, redownload/reinstall that app.
In many circustances this work around is helpful.
If the issue still persists, contact Instagram support team and ask them, or join one of their forums.
