When I create a Smart Album to filter on the device used to take the picture, the selector has very few options like "iOS". It does not contain eg "iPhone 11 Pro". I have attached a screen shot. The picture "Get info" says "iPhone 11 Pro back triple camera" but "Camera Model includes" only has a few items like "iOS". I am on Catalina.

The selector for the camera models needs scrolling. The list is usually longer than shown in the selector menu.
Try to scroll it with the traclpad or mouse, even if the scrollbar does not show.
You could also try "Camera Model is .." instead of "Camera Model includes ..."
