Apple Watch Series 5

I have just received my first Apple Watch series 5 and paired it with my iPhone 7 today, but I notice that it is showing 2 Apple Watches in the Health app under Sources. One of the entries says “Thus Apple Watch is no longer paired with this iPhone”, but when I go into the Activities there are things logged there. The other watch listed details my watch but there is no data logged next to it. Can anyone help me sort this out? Unfortunately I am not at all technically minded so don’t know where to begin with this.

Any time you unpair and re-pair your watch a new entry is listed under sources,if you delete any of these entries then you lose all data, awards and acheivements for the period of that pairing. My wife lost 2 years of data doing just that.
