I have connected my iPhone X to my Macbook Pro via a USB cable and turned on the 'Show this iPhone when on Wi-Fi' box, but whenever I unplug my phone it never shows up in the 'Locations' tab of my sidebar. I've tried it both with and without being connected to a different power source.
I've tried everything I could think of so I'd really appreciate it if someone could help me out with this!

Thank-you for the link to the article. I've read through it and made sure I followed each step of each section, but unfortunately my phone still does not show up in the finder over Wi-Fi. Both my phone and mac are using the same Apple ID and Wi-Fi also.
I've connected and synced my iPhone with a USB a number of times before, is there a step I'm missing when doing this to get the Wi-Fi syncing to work?
Read the above article carefully and thoroughly.
Check things like both devices using the same Apple ID, both in With-Fi, etc.
