All my music is there, but the movies are "not." The Music Media folder location points to my old iTunes library, but its not importing/displaying all the content.

It doesn't. If you see a Movies & Tv folder, its either a playlist, or something you manually created in iTunes before upgrading to Catalina.
In which case the Music App will respect that folder.

I think I discovered this, but WHY IN THE WORLD would Apple continue to have an item folder in the left navigation that says, "TV & Movies?!" 🤷🏼♂️
And...why do all my DVDs that I've converted to MP4s not show up in the Apple TV app?
These are reasons that long-time Apple users are ditching iTunes/Music for other media center apps. 🤦🏼♂️
The Music App as its name implies is for Music only. ie audio files.
Your movies and any other videos should appear in the TV App, under Library.
My iTunes [movie] library is not visible in the new apple Music App on Catalina
