FYI ... the whole update process for me were these basic steps:

  1. After powering on my new iPhone, and plugging it into power, the first stage of the update process was to transfer my Apple ID & accounts info from my old phone to my new one. This took about 5 minutes. It requires that both devices are Bluetooth enabled and near each other.
  2. The next stage was phone activation. This took approximately 5-10 mins.
  3. After that, I was prompted to upgrade the new phone's iOS version. (It came with 13.4, and 13.4.1 was the pending upgrade.) I elected to do so, and that process took approx. 15-20 mins.
  4. The last stage was where I was asked if I wanted to transfer my old phone's apps/data to my new phone. This took another 20-30 mins and a number of apps were automatically selected to download from the Internet which was done in the background and took some additional time. This was done with the Bluetooth connection between the phones and I did not need to rely on a recent backup of my old phone to restore from as was necessary in the past.

FWIW. I just replaced my iPhone SE with a 2nd generation model. My original phone has 32 GB, the new one 64. Regardless, the over-the-air activation, setup, and data transfer process took approximately 30-45 minutes overall. (I live in a rural area with 10 Mbps down Internet service, as a baseline.) Depending on the amount of data on your old phone, this could be shorter or longer. 1 hour may not be excessive.
