My Photo Booth adjusts (sometime in the middle of recording) lighting (and maybe focus)...is there an easy way to disable this function, or control it?

Your options are limited—
Photo Booth User Guide for Mac - Apple Support
You can turn off automatic adjust brightness in
>System Preferences>Displays and see if this is all it takes.
Auto focus/Auto light (exposure) adjustment in Photo Booth on MacBook Pro.
