How do I find the number of people who are subscribing to my podcast? where is that information?

Can't find where my subscribers are listed.

There is no such list, and you can't get information on individual subscribers. There are two methods of getting the number of subscibers, or at least of episode downloads.

Apple provide a partial method: please see https://help.apple.com/itc/podcastsanalytics/#/itc1723472cb and subscequent pages. However note that they say:

Podcast Analytics begins gathering data as soon as users play content in the Podcasts app (iOS 11 or later), in iTunes 12.7 or later (macOS and Windows), or on HomePod. Apple only displays data from users who agreed to share their diagnostics and usage information with providers

So it's far from complete information.

If you have access to your server you can get information on downloads:

Note that it's only downloads of episodes which are any use. Downloads of the feed are meaningless since subscribers check it at frequent intervals.
