Generally it's done by widening or shrinking a column, or widening or shrinking a row.
Just click and drag, both in Excel and in Numbers, and in many other spreadsheets.

Once had Excel in my old Mac but the new one has reorganized and is less simplified, Why do they do this? It's ridiculous to make so many changes at any one time. It only wastes time and causes confusion.

MS Excel is a spreadsheet application made by Microsoft. Microsoft has a similar support community site for users of its software. You'll find it here:
Click the Office topic menu button and choose Excel.
