Broken i-Phone screen back-up for transfer too big, how to remove apps

So my Iphone 6+ screen is completely broken, I can only unlock with touch but can not do anything else. I made a back-up to transfer to an Iphone 7, but the back-up is around 53GB and the Iphone 7's free storage is only 32GB. How can i manage my Iphone's 6 storage without using touch. I need to remove some apps in order to make a smaller back up... Or I need to only partly restore the made backup. What are my options?
