If you purchase any watch. Can you use it without a data plan and just off your phone?
If later down the line you want to place it on a plan can you do so?

If you are looking at the sport model (aluminum) you have an option of buying the GPS only watch or a GPS+Cellular. No, you don't have to immediately use the cellular function and can later use it. If you buy the Stainless Steel, Ceramic, Titanium or Hermes versions they only come with Cellular.

Not all watches have cellular options only the newer ones.
Apple seems some watches with GPS and GPS and cellular, you would need the GPS and cellular one to have cellular data.
