So I’m sharing my location with my boyfriend and he said that I turned it off. When I go into our text conversation it still says that I’m sharing my location. I also never turned my location settings off manually in settings. Is there another way that it could have turned off by itself?

Does he have Access to your Apple ID?
With these settings not being changed, he not would see it, anyway, if he doesn't have the same Apple Account as you (both having Access to the same Apple Account). I'd say don't share your account with anyone, whomsoever, nor the phone's location.
