I've sent a text message to a couple of recipients and the iPhone chose to use their email address instead of their phone number.

I have the answer from someone in my office. Go to settings and messages. The send as SMS has to be checked (on) also for it to send to the phone number instead of the email address.
Contacts have options to receive messages on their devices, email, phone numbers. Check before you send as to what address you are sending to🤔
I haven't had any problem sending text to either recipient until I got a new iPhone. This has just happened. It isn't an email address that she has under her imessage > send and receive. The text was sent to an email that I have set up in her contact on my iPhone.
