Mail deleting two emails when I try to delete one

Recently (last several days), when I select one email in Mail then click on the trash icon, it is deleted but an adjacent email is deleted as well. I can recover (using Edit-Undo Delete Message), but only if I notice that another email has been deleted. The problem is intermittent and unpredictable.

I recently purchased a new Macbook Pro which had Catalina as the OS. After a few weeks, I realized that the Mail program was deleting ALL emails after two weeks. I searched and searched for a preference I could set to stop this since I like to keep the majority of my emails for reference. But all I could find was a preference for archiving junk mail. So very helpful. After searching on the Internet, I find that this is an "issue" with Catalina. But it has been an issue since 2019 and Apple still hasn't fixed it?? Has anyone found a way to stop Catalina's Mail program from deleting every effing email after two weeks? I really don't want to have to archive every single email I want to keep. It's a totally unnecessary step and wasn't a problem with any other OS.
