Is there any way to make my old iphones and Wathces disappear from the list of my devices? I have unpaired them but they still appear in Health

If you remove them from Health, it will remove all of the old data that they collected. They are just there to show where the data came from. That data is part of your Health configuration. It is not necessary to remove them from there. They will not collect anymore data if you no longer have them.
