apple watch move categories

I like to do a combination walk and run when I go exercise. I never know if I should start the "walk" or the "outdoor run" exercise counter? What are the differences in calculating the different categories? Should I use "outdoor run" or "outdoor walk" when I do both? Thanks!

There is not huge difference between the two, however, you can read about the differences here:

It sounds like you might be doing HIIT workouts? If that is the case, there is also a HIIT workout option.
