Numbers Sorting
In Numbers, can I sort 'December' alphabetically instead of Numbers considering it a date (numerical)? TIA

Yes.
To do so, you'll need to ensure that December is a text value, not a Date and Time value.
Either set the column's Data Format to 'text' before entering the month names, or type an apostrophe/single quotation mark before each month name to force Numbers to see the entry as a word, not as a monthname.
'December will display in the cell as December, and will be aligned to the left boundary of the cell.
Note the label and value from the selected cell, displayed in the box at the bottom of the document window. If the single quote (not visible in the box or on the tables) were omitted, "Text" would be replaced with "Actual", snd December would be replaced with a D & T string showing December 1, 2020 at 00:00:00 (Midnight at the beginning of that day).
The sorted table contains the same values, sorted alphabetically.
