Broken stack bar chart with date values: bars don't line up, and getting random x axis label values when entering min scale value

Here's the first photo of the bars not lining up with the x axis date labels/lines, and also the start date seems to be picked at random, rather than using the first date in my data fields? Otherwise this chart basically looks like what I'm going for. I thought I could fix the start date part by changing the min value field highlighted under the value (x) axis scale section on the right, which is where I ran into the second problem.

When I try to enter a date in the min field under the value (x) >> axis scale section, then all of the x axis labels show seemingly random dates suddenly, and the bars from the photo above totally disappear because they're not on the date scale of the chart looks like. I have checked that the date cells are formatted as the same date format as the value x labels option, and tried selecting the "Same as source data" option for Value Labels, and it still does the same random thing? Interestingly the min field under axis scale does seem to automatically pick up the same date as I manually type in.

I'm hoping someone can point out any more things I could try, otherwise it seems like the Numbers software is just bugging right out for whatever reason, and I'll report that to Apple. Thanks for any suggestions!
