Thank you for clarifying.
I would recommend removing the mail account from your Mac, then re-adding it.
When you re-add it, ensure to select the 'Exchange' account provider. You can learn how to do so here: Add or remove email accounts in Mail on Mac.

I understand you have duplicate items in your Sent mailbox.
Can I ask, which mail service are you using?
Does this issue occur when using the web portal of your mail provider?
Does this issue occur on any other devices?

Thanks for your response.
I'm with Outlook.
No this issue doesn't happen when I send emails from the web.
It doesn't happen when using the apple mail app on my iPhone either, only while using Mac.
Also, this issue only occurs when sending new emails not when I reply to others.

This has sliced the issue! I had previously removed it and added it back but not under ‘Exchange’.
