How do I use a gift card and pay with apple pay? The only way I could see to use the gift card was to not use apple pay. I want to pay with apple pay to get my cash back from my Apple Credit Card.

The first step would be to add the card to Wallet. Open the Wallet app from your Home screen and scroll to the bottom of the app. Tap, Edit Passes > Scan Code, and scan the code on the card. This will take you to the Apple website, and you can confirm adding the gift card to Wallet.
