Has anyone suggestions on how one can modify the interface on the iPhone SE 2020 to make it simpler for seniors to use.

There is no way to modify the interface. Apple does not allow that type of access on their devices.
The interface is simple enough to use, and you can add gestures and Siri shortcuts if you need to facilitate access to certain things.
