Is it possible to backup iPad to macbook without using iCloud?

I absolutely Do Not use iCloud (except exclusively for Find My). When I plug my iPad into MBP and go to Finder and tap on it there, it wants to Sync to the MBP it is plugged into. 'Sync' is Not 'Backup'.

Mac mini, macOS 10.13
