Accessing earlier Contacts backups

I am trying to restore my Contacts list. I changed jobs this week but they let me keep my old phone. During the process of removing the work apps, it also deleted my contacts. When I go to iCloud to restore my contacts it only shows me two options, both within the past week. One is empty and the other has only a few of my contacts.

How do I restore contacts from an earlier date? Like last month?
