I have a 2020 iPad Pro and I would like to film live and send that signal to my late 2012 Mac mini to send as a live stream. Is this possible either beaming the signal or physically connecting the two devices?

You can connect the iPad physically with a cable to the Mac, and then use Quicktime to see the iPad´s screen on the Mac. Whatever you do then on the Mac with the Quicktime window is up to you.
