iPhone SE 2nd Gen backups to Mac Catalina not showing previous backups.

iPhone SE 2nd Gen backups to Mac Catalina not showing previous backups. Where are the previous backups? In Finder / iPhone / General / Manage Backups only the latest one is displayed. Are previous backups not kept? If so, what is the point in having a backup that only goes back 'one only'? Suppose I want to backup to a backup I made a couple of weeks ago; it isn't there. Can someone help with this please.

iPhone SE, iOS 13

Solved. In Finder / iPhone / General / create a backup. The go to 'Manage Backups', right click on the latest backup, select Archive and there you begin a historical backup system.

To restore a backup, select 'Restore Backup' in Finder, and select the one you wish to revert to.
