I hv iphone 11 and trying to enable Chinese simplified handwriting option. But can't find from listed keyboard choices. Why?

Don't you find more if you do Add New Keyboards and go to Chinese Simplified?
Sorry, you are not posting pictures so I really cannot tell what you are seeing and not seeing. What do you see when you go to the Add New Keyboard screen as shown below and then tap on the Chinese Simplified item?
Please post a picture of your settings page for Chinese simplied. Mine looks like the below:
There are only 1st 3 options as above in my Chinese simplified pinyin keyboard.
There is only one Chinese simplified keyboard in keyboard setting.
