I dropped mail icon off of screen
how do I reestablish

Do a spotlight search for it. Swipe down from the middle of any home screen and type in Mail in the search field. If it appears in a folder, you will see the name of the folder in which it is residing.
You can also reset the home screen layout which will return the app to the home screen, if it is on your device, but it will destroy your current home screen structure. Settings>General>Reset>Reset home screen layout.
If it still doesn’t appear, you can download it again in the App Store. Use the search feature and type in Mail into the search field.
