I synced my contacts recently, and now I have contacts of people I don't even know - I'm suspecting they are my kids who I used to share an apple ID with. How do I unsync this without deleting every single contact individually?

Unfortunately, a manual delete of the unwanted contacts is the only way to fix the problem.
If you are still sharing an Apple ID, someone else's contacts may sync. If you have stopped sharing an Apple ID, then no ones contacts should sync to your device/computer.
Once I do that, will my phone keep syncing to someone else's whenever they add a contact?
