When I go to "About this Mac" it says "MacBook Pro (16-inch, 2019)" but the total length of it is 14"
Is this a mistake on Apple or is there something I'm not aware of?

All displays and TVs are measured diagonally.
How are you measuring the screen? You don't measure the screen by measuring one side for length. You measure it diagonally.
If you label each corner with A, B, C and D (From top left and clockwise) then you measure the screen from A to C or from B to D.
What did you find when you do that?
