Logitech bluetooth keyboard isn't discoverable with Catalina 10.15.5

I have a brand new Logitech k380 keyboard that won't show up in available devices on my 2020 Macbook Pro. I know the keyboard is working properly because it can be discovered by my Iphone.

I've tried restarting, debugging the bluetooth, updating the Mac OS to Catalina 10.15.5 and nothing works.

Hi, welcome to the Apple Users Community.

If you have any other peripherals connected using USB-C/Thunderbolt-3 or USB 3.0 cables they can cause BT and WiFi connectivity issues.

Thanks! so it looks like that must be the issue. I removed all of the USB-C connected items and was able to see the keyboard as discoverable now (which is great), but it still was unable to connect. What doesn't make sense is that I have a much older bluetooth keyboard that connects just fine, so is it probably this particular device is the issue?
