Apple Event: May 7th at 7 am PT
I do not see the option to pause a video recording on my iPhone 11 Pro. I was making a video of birthday celebration in the family. While doing so there was a slight interruption and I wanted to pause the recording to resume later momentarily but I realised that there was no pause button. Why is that?

Glad that Apple didn't mess that part i.e., pause can be used on recorded video [ I do miss my Samsung phone].

Video pause while recording does not exist. However the pause can be used on recorded video.
Logically it is same as Stop and Restart.
How can I pause while recording a video on iPhone 11 Pro?
