Syncing iPhone X from Catalina syncs ALL my music every time, taking ages

I've only recently upgraded (I use the word loosely) to Catalina.

Now, every time I sync my iPhone X - for example if I have added a couple of songs to the Music app on my iMac - it copies every song from the iMac to the iPhone, taking ages.

With iTunes it just used to add the new songs to the iPhone X and so syncing only took a few seconds.

Why is this happening and how can I make it just copy the updated songs/info to the iPhone, not every single thing every single time?

Hello BlueberryiMac.

You are still able to purchase from from then iTunes Store as usual. You can manually choose which playlists from the Mac that you want on your iPhone.

OK. It says this:

Add content from the Music or TV app

Connect your device to your computer.
Open the Music app or TV app on your Mac.
Select the content that you want to add to your device from your library.
Look in the left sidebar for your device, then drag the content to your iPhone, iPad or iPod touch.

What if I purchase a new song from the iTunes Store on my iMac and I have dragged it into a playlist in the Music app on my iMac... How do I make sure that newly purchased song goes into the correct playlist on my iPhone, if I am simply dragging the new song from the Music app to the iPhone icon in the Catalina sidebar?

I do not stream songs using Apple Music. I prefer to buy them and I like to have them in identical playlists on both my iPhone and iMac.
