I have the brand new MacBook Pro (2020) and I am having problems with "double clicking." For example, when opening something on my desktop, I have to click 5-6 times for it to fully open. How can I fix that? It is really annoying.

I contacted Apple Support and they helped me!!
My problem was in Accessibility. I had the double clicking speed on the fastest!!
System Preferences > Accessibility > Pointer Controll > Double-click speed > Slow

Okay; so while in Safe Mode, the trackpad clicking was still inconsistent / intermittent.
Reset the NVRAM and SMC, and try again.
If that fails, contact the folks at Apple and start a service request: Get Support
Does the problem also arise when booted in Safe Mode?
I just attempted to restart my computer in "Safe Mode" and the program still persisted. Thanks
