Email is showing up instead of my number in a group text. Why? How to change it back to number?

What that means is that you're (not on purpose) sending iMessages from your iCloud account (email). You can link your phone number with your iCloud account (it should be by default).
The simple fix is to go to Settings, Messages, and there's an option to "Start Conversations from..." and choose your phone number instead of your AppleID (iCloud Account email address)
