Pairing an Apple Watch

My old iPhone recently died suddenly. I had never backed it up on I cloud. My Apple Watch is still connected to the old phone, how do I pair it with the new phone without doing the reset and loose all my watch data

If you don't have an iPhone backup, about all you can do is follow the steps in the "Erase your Apple Watch" section of:

Unpair and erase your Apple Watch - Apple Support

Unfortunately you will lose all your data. Sorry.
