Pairing Apple Watch to new iPhone without the old one and without losing data

I have an Apple Watch paired to an iPhone that was robbed, now I want to pair it with a new iPhone but without erasing or losing the data in the Apple Watch (it isn’t in iCloud). What can I do?

Sorry to hear you were robbed of your iPhone.

Seems the only way to un-pair a Watch from a phone you no longer have, is to erase the Watch. I may be wrong.

If needed: Watch Support website (info. / support / contact)
