How do I insert a new folder into a list of folders on iMac Pages?

You can insert an new folder in Finder by opening a Finder window, navigating to the location where you want to put the new folder, then pressing shift-command-N (or choosing New Folder from the File menu.
n Pages, you will get the New Folder button in the Save dialogue if you are saving a document for the first time, or in the Save As dialogue if you are saving an existing document with a different name or in a different location.
