How safe is it when you get the devices you just bought shipped to your house. Any reassurance would be appreciated because im very skeptical seeing as what im buying is too expensive for anything to happen to it and the items i need cant be picked up at my local apple store because its out of stock a the moment.

Stock items ship next day express, however custom orders ie BTO (built to order, ) all come directly from China and there are associated delays.
Call Customer Support (800) MY–APPLE (800–692–7753) and you can order over the phone. If a stock item is out of stock at your local store— there is no charge for on-line (over the phone) ordering and it can be shipped from any regional facility that has it.

I have ordered lots of items such as MacBook, phone etc and never had any issue, always arrived on time and by courier
In this time of Covid they don't normally get signature but they do ring bell and wait for you to come before leaving package, I've never had a package just left lying in the porch.
I would not be worried personally
