Backup from an already lost/stolen device?

Is it possible to backup the notes from an already lost/stolen iPhone? At the "Choose which apps to back up on your iPhone, iPad, or iPod touch" section, after step 2, I can see my lost device, but i can do nothing, since it's not my current device. Unfortunatelly, there is no iCloud save, but i can see that a 2,5 GB copy is available and it was made on the day that i lost my iPhone.

If you were storing your notes in iCloud Notes, then it's not considered a part of the backup as your notes are stored in iCloud. This is what iCloud backs up -- What does iCloud back up? - Apple Support.
