How do we set the call history on an iPhone so that it can delete after a specific time frame?

The Recents call history keeps the 100 most recent calls. You can’t change that. You can delete calls manually from the list.
Your carrier maintains a complete call log that goes back forever, and can’t be deleted. You can view it on their website or in their app (if they have one).
