shooting in square on iphone11 pro, after taking the added steps to get ther (why????) I still see outside of the square. How do I block out the outside of the frame

You cannot.
Outside the frame is faded so much there’s no possible ambiguity about whether it’s included. And it provides the added information you need should you consider returning to 4:3 mode.
