why does the little row of icons appear in Messages; why the quiet/loud option

Occasionally I get a little row of icons below the message box in Messages. Sometimes, not always, they contain an additional icon that takes one to some animal icons and other stuff.

I have no control over when this row appears, nor do I know what they are for, except the photos icon and the animals. What is this and why can I not control it?

Also, after composing a message and then clicking “Send”, I get a vertical menu with quiet/loud options.

Why does this appear, and when? Again, I have no control over when it appears.
