Why are my emails loading as read on my Mac?

if your email is an IMAP account then email will sync. So if they were unread on your Mac then you turned off your Mac, then read the email on your phone, the next time you opened Mail on your Mac the email in question would show as read. I'm sorry if I did not understand your description.
