My finder dock icon right click is showing a big list. I don't know what I did to cause it but I don't like it. I've been through every dock setting and finder setting I can find. How to get it back to a normal right click menu? This is on MacBook Pro 16 inch, 2019, Catalina 10.15.6.

You mention going through System Preferences looking for the possible culprit. Did you also check System Preferences > General to see how many "Recents" you have set to show? The amount shown here also affects app menus. More details about that option can be found here: Change General preferences on Mac
